本研究旨在了解新疆柯尔克孜羊肉品质与常规营养成分的特点,综合评价柯尔克孜羊肉的质量指标。相关指标的检测以国标法为基础,开展柯尔克孜羊与新疆本地其它品种羊的肉质差异对比试验研究,进行了部分感观指标的评价、主要营养成分及矿物质等指标理化分析。结果表明,与新疆本地其它四种羊肉相比,柯尔克孜羊肉的粗脂肪、粗蛋白、和钙、铜、铁含量优势显著。羊肉重金属富集情况表明,铅含量为0.1688 mg/kg,镉含量为0.0158 mg/kg,低于相关国家标准的限值。结论:柯尔克孜羊肉营养丰富,肉质优良,重金属富集量低,在本试验所处的生态条件下,柯尔克孜羊具有生产有机食品的品种优势。
Abstract:In order to understand the characteristics of Xinjiang Kirgiz mutton quality and its conventional nutrients, and to comprehensively evaluate the quality indicators of Kirgiz mutton. Based on the national standard method, the meat quality differences between Kirgiz sheep and other local sheep breeds were studied. The evaluation of some sensory indexes and the physical and chemical analysis of main nutritional components and minerals were carried out. The results showed that the contents of crude fat, crude protein,calcium, copper and iron in Kirgiz mutton were significantly higher than those of other four kinds of local mutton. The enrichment detection of heavy metals in mutton showed that the contents of Pb and Cd were0.1688 mg/kg and 0.0158 mg/kg respectively, which were lower than the limits of relevant national standards.In conclusion, Kirgiz mutton is rich in nutrition, good in meat quality and low in heavy metal concentration.Under the ecological conditions of this experiment, Kirgiz sheep has the advantages of producing organic food.
