不同体重牦牛犊产肉性能和肉品质分析的研究

摘要:

对 4 0头 4~ 6月龄犊牦牛进行屠宰 ,对其中 30头测定其产肉性能 ,并对其产肉性能指标与活重及胴体重进行了相关性分析 ,另外 10头采样进行肉品质分析。结果表明 :犊牦牛的平均活重为 4 5 .82± 12 .97;胴体重2 4 .2 5± 6 .2 8;净肉重 17.33± 3.93;平均屠宰率 5 3.6 1% ;净肉率 38.96 % ;胴体产肉率 72 .36 % ;眼肌面积为16 .5 82cm2 。活重与胴体重的一元回归方程 :y =0 .5 2 34X +0 .4 91r=0 .935 (P <0 .0 1) ;活重与净肉重的一元回归方程 :y =0 .36 0 1X +0 .2 6 33r=0 .930 (P <0 .0 1) ;活重与眼肌面积的一元回归方程 :y =0 .14 8X +9.199r =0 .4 16(P <0 .0 5 ) ;胴体重与净肉重的一元回归方程 :y =0 .6 95X +0 .72 3r=0 .975 (P <0 .0 1) ;眼肌面积与净肉重的一元回归方程 :y =0 .5 2 99X +7.85 3r =0 .4 96 (P <0 .0 1)。大理石花纹等级在 3~ 4 .5之间 ;肉色评分在 3~ 4 .5之间 ;熟肉率 6 1.82± 3.0 1;肌纤维直径为 2 4 .0 3± 2 .6 2 μm ;pH为 5 .4 8± 0 .12

Abstract:

After 40 baby yak aged 4-6 month-old were slaughtered, meat laying performance among 30 baby yaks was determined and correlation between meat laying performance and live weight and carcass weight was analyzed, and meat quality of 10 baby yaks was estimated. The result showed: The averaged live weight was 45.82±12.97;The average weight of carcass was 24.25±6.28;the weight of net meat was 17.33±3.93;the yield of carcass was 53.61%; the percentage of meat was 38.96%;the meat percentage of carcass was 72.36%;the area of eye muscle was 16.582cm2.The equation between live weight and carcass weight was y=0.5234X-0.491 r=0.935(P<0.01); the equation between live weight and net meat weight was y=0.3601X+0.2633 r=0.9304(P<0.01); the equation between live weight and area of eye muscle was y=0.148X+9.199 r=0.416(P<0.05); the equation between carcass weight and net meat weight was y=0.695X+0.723 r=0.975(P<0.01); the equation between the weight of net meat and area of eye muscle was y=0.5299X+7.853 r=0.496(P<0.01). The marbling score was 3-4.5;the score of meat color was 3-4.5;the percentage of cooked was 61.82±3.01%; the fiber diameter 24.03±2.62μm; the ph of meat was 5.48±0.12.
