【目的】旨在探究巴音布鲁克羊肌内脂肪含量与产肉性能及肉品质的相关性。【方法】试验以30只9月龄巴音布鲁克羊为研究对象,测量其肌内脂肪含量、产肉性能及肉品质相关指标,并进行相关性分析与线性回归方程构建。【结果】巴音布鲁克羊肌内脂肪含量与眼肌面积、GR值、背膘厚呈极显著正相关(P<0.01);与含水率、L*45 min呈极显著负相关(P<0.01);与a*45 min呈显著正相关(P<0.05);与饱和脂肪酸和单不饱和脂肪酸含量呈极显著正相关(P<0.01);与多不饱和脂肪酸含量呈显著正相关(P<0.05)。以肌内脂肪含量为自变量(x),分别以含水率、L*45 min、饱和脂肪酸、单不饱和脂肪酸含量为因变量(y),建立线性回归方程:y=0.787-0.015x,y=42.203-2.046x,y=17.164x+6.474,y=1.686x+13.787。【结论】肌内脂肪含量与产肉性能及肉品质相关指标存在显著相关性,研究结果可为巴音布鲁克羊的品种改良、肉品质提升及科学化饲养管理提供理论数据支撑。
Abstract:【Objective】 The aim of this study was to explore the correlation between intramuscular fat(IMF) content and meat production performance as well as meat quality in Bayinbuluke sheep. 【Methods】 A total of 30 9-month-old Bayinbuluke sheep were selected as experimental animals,their IMF content and the indicators related to meat production performance and meat quality were measured,followed by correlation analysis and regression equation establishment.【Results】 The results showed that IMF content was extremely significantly positively correlated with eye muscle area,GR value,and backfat thickness(P<0.01),while extremely significantly negatively correlated with moisture content and L*45 min(P<0.01). It exhibited a significant positive correlation with a*45 min(P<0.05),and an extremely significant positive correlation with saturated fatty acid and monounsaturated fatty acid content(P<0.01),as well as a significant positive correlation with polyunsaturated fatty acid content(P<0.05). Using IMF content as the independent variable(x),and moisture content,L*45 min,saturated fatty acid content,and monounsaturated fatty acid content as dependent variables(y),the regression equations were established as follows: y=0.787-0.015x,y=42.203-2.046x,y=17.164x+6.474,y=1.686x+13.787.【Conclusion】In summary,there was a significant correlation between IMF content and the indicators related to meat production performance and meat quality. Theoretical support was provided for breed improvement,meat quality enhancement,and scientific feeding management of Bayinbuluke sheep.
